This is an easy, delicious recipe and I normally have all the ingredients on hand.

I use red skinned potatoes and I leave the skins on.

Ingredients

  • 1 lb
    potatoes, boiled, peeled and cut into bite sized pieces
  • 2
    eggs, hard boiled and chopped into pieces
  • 1/4 c
    mayonnaise, i use helmann's.
  • 1/4 c
    sour cream
  • 1 Tbsp
    yellow mustard
  • 1/4 c
    sugar *
  • 1 tsp
    vinegar
  • ·
    salt and pepper, to taste

How to Make Amish Potato Salad

Step-by-Step

  1. Combine Mayonnaise, sour cream, mustard, sugar, vinegar, salt and pepper. Mix well.
  2. Place potato pieces and egg pieces in a large bowl.
  3. Pour sauce over potato/eggs and gently stir until well coated. Chill at least 30 minutes, before serving.
