orzo salad with spicy buttermilk dressing

Love macaroni salad, and love orzo....this is a combination of the two. This is a variation of what was found in a local newspaper, the Gulf Breeze News.

Ingredients

  • SALAD:
  • 1 cup orzo pasta, uncooked
  • 1 cup corn
  • 12 - cherry tomatoes, quartered
  • 3 - green onions, sliced
  • 15 ounces can black beans, drained and rinsed
  • DRESSING:
  • 1/4 cup buttermilk (low fat ok)
  • 3 tablespoons fresh cilantro, chopped and divided
  • 3 tablespoons fresh lime juice
  • 2 tablespoons sour cream (light ok)
  • 2 tablespoons mayonnaise
  • 1 teaspoon chili powder
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon ground red pepper
  • 2 cloves garlic, minced
  • GARNISH:
  • 1 - avocado, peeled and pitted, cut into 8 slices
  • 1 tablespoon fresh parsley, chopped

How To Make orzo salad with spicy buttermilk dressing

  • Step 1
    Cook orzo according to package directions, omitting salt and fat. Drain and rinse; drain well.
  • Step 2
    Place orzo, corn, and next 3 ingredients (through beans) in a large bowl; toss.
  • Step 3
    Combine buttermilk, 2 tablespoons cilantro, and next 8 ingredients (through garlic) in a small bowl, stirring well with a whisk.
  • Step 4
    Drizzle over orzo mixture; toss. Top with avocado; garnish with remaining cilantro and parsley.
