This recipe was from the California Olive Industry and is really, really good. Serves a lot of people.

Ingredients

  • 2 cups ripe olives
  • 1 cup diced 1/4 inch red bell pepper
  • 1 cup diced 1/4 inch yellow bell pepper
  • 1 cup diced 1/4 inch green bell pepper
  • 1/2 cup minced scallions
  • 1/4 cup capers
  • 2 packages 1 pound each orzo pasta cooked and chilled
  • 1 cup herbed white wine vinaigrette dressing
  • 1/2 cup pine nuts toasted

How To Make orzo salad with ripe olives and pine nuts

  • Step 1
    Combine first six ingredients in a large bowl. Mix well. Add orzo pasta and vinaigrette dressing. Toss well. Sprinkle with toasted pine nuts.
