"Opa!" Pasta Salad

Feta, Artichoke Hearts, Black Olives, all in a pasta salad with a great dressing.

Ingredients

12 oz
uncooked tri-color rotini pasta
2 tsp
salt, divided
1 tsp
black pepper
1/2 tsp
onion powder
6 oz
jar artichoke hearts in oil
1 small
can sliced black olives
4 oz
feta, crumbled
1/2 c
red wine vinegar
1/3 c
olive oil
1 tsp
italian seasoning
1 tsp
dijon mustard

Step-By-Step

1Boil pasta according to directions on box, adding 1 teaspoon of the salt to the water. Drain well and place in large bowl.
2Add the remaining salt and pepper. Add the onion powder, drain the artichoke hearts and olives and add both. Add the remaining ingredients and toss gently.
3You can add some freshly chopped basil if you have it, otherwise just omit. You can also add some grated parmesan as an option.
