Ingredients
- 12 ounces uncooked tri-color rotini pasta
- 2 teaspoons salt, divided
- 1 teaspoon black pepper
- 1/2 teaspoon onion powder
- 6 ounces jar artichoke hearts in oil
- 1 small can sliced black olives
- 4 ounces feta, crumbled
- 1/2 cup red wine vinegar
- 1/3 cup olive oil
- 1 teaspoon italian seasoning
- 1 teaspoon dijon mustard
How To Make "opa!" pasta salad

Step 1Boil pasta according to directions on box, adding 1 teaspoon of the salt to the water. Drain well and place in large bowl.

Step 2Add the remaining salt and pepper. Add the onion powder, drain the artichoke hearts and olives and add both. Add the remaining ingredients and toss gently.

Step 3You can add some freshly chopped basil if you have it, otherwise just omit. You can also add some grated parmesan as an option.
