Feta, Artichoke Hearts, Black Olives, all in a pasta salad with a great dressing.

Ingredients

  • 12 ounces uncooked tri-color rotini pasta
  • 2 teaspoons salt, divided
  • 1 teaspoon black pepper
  • 1/2 teaspoon onion powder
  • 6 ounces jar artichoke hearts in oil
  • 1 small can sliced black olives
  • 4 ounces feta, crumbled
  • 1/2 cup red wine vinegar
  • 1/3 cup olive oil
  • 1 teaspoon italian seasoning
  • 1 teaspoon dijon mustard

How To Make "opa!" pasta salad

  • Step 1
    Boil pasta according to directions on box, adding 1 teaspoon of the salt to the water. Drain well and place in large bowl.
  • Step 2
    Add the remaining salt and pepper. Add the onion powder, drain the artichoke hearts and olives and add both. Add the remaining ingredients and toss gently.
  • Step 3
    You can add some freshly chopped basil if you have it, otherwise just omit. You can also add some grated parmesan as an option.
