great summer macaroni salad

Very tasty, simple recipe, that goes well at picnics, and pot lucks. Has been a hit with my family and friends.

Ingredients

  • 1 box elbow macaroni (giant)
  • 2 cups mayonnaise, light
  • 1/3 cup white or cider vinegar
  • 1/3 cup white sugar
  • 1 tablespoon prepared yellow mustard
  • 1 1/2 teaspoons salt
  • 1 teaspoon garlic powder
  • 4 stalks celery - diced
  • 1/2 - purple onion diced
  • 10 - eggs hard boiled and diced
  • 1/2 - green pepper diced
  • 1 teaspoon spicey pepper

How To Make great summer macaroni salad

  • Step 1
    Mix mayonnaise, vinegar, sugar, mustard, salt, garlic powder, and spice pepper to make a dressing.
  • Step 2
    Cook pasta according to package instructions. Rinse and drain well.
  • Step 3
    Now add cooked pasta to dressing mixture, mix well, letting the dressing blend into the pasta.
  • Step 4
    Add the diced eggs, celery, green pepper and onion to the pasta mixture. Blend well. May serve still warm or refrigerate and serve cold. I liked mine better after a few hours when the flavors blended.
