Ingredients

  • 6 c
    cooked pasta (ziti, rotini, etc.)
  • 1 1/2 c
    shredded mexican cheese blend
  • 1/2 c
    black olives, sliced
  • 2/3 c
    red bell pepper, chopped
  • 1
    jalapeno pepper, finely chopped
  • 1/2 c
    celery, thinly sliced
  • 1/3 c
    onions, finely chopped
  • 1
    tomato, seeded and chopped
  • 1 - 2 Tbsp
    fresh parsley or cilantro
  • 1 1/2 c
    ranch dressing (see note below)
  • 3/4 c
    salsa

How to Make Fiesta Pasta Salad

Step-by-Step

  1. With a hand blender, blend ranch dressing and salsa until smooth.
  2. Mix dressing and all salad ingredients in large bowl.
  3. Chill before serving.
  4. Alternate dressing - With a hand blender, mix until smooth 1/2 cup sour cream, 3/4 cup mayonnaise, 1 pkt. ranch salad dressing and 3/4 cup salsa.
