fiesta noodle salad

This recipe makes a lot of noodle salad - you may want to cut it in half if you're not feeding a crowd. I make this a lot for my family and also once a year for our town's annual 4th of July celebration -- it's very refreshing and disappears quickly. Even kids love it!

Ingredients

  • 1 - lb. mini bow-tie pasta
  • 1 - can corn
  • 1 - can black beans
  • 2 - large tomatoes (seeded and diced)
  • 1 - large green pepper (seeded and diced)
  • 1 - medium onion (diced)
  • 1 - cup mayonnaise
  • 1 - cup sour cream
  • - ground paprika - to taste and for color
  • - salt - to taste

How To Make fiesta noodle salad

  • Step 1
    Cook pasta for about 20 minutes -- this prevents the mayonnaise and sour cream from being totally absorbed into the noodles. Rinse pasta with cold water and allow to completely cool.
  • Step 2
    Combine cooked pasta and all other ingredients, mix thoroughly and chill for at least 2 hours before serving. NOTE: If making the full recipe, you will need a very, very large bowl or pot to mix this in.
