fiesta noodle salad
This recipe makes a lot of noodle salad - you may want to cut it in half if you're not feeding a crowd. I make this a lot for my family and also once a year for our town's annual 4th of July celebration -- it's very refreshing and disappears quickly. Even kids love it!

Ingredients
- 1 - lb. mini bow-tie pasta
- 1 - can corn
- 1 - can black beans
- 2 - large tomatoes (seeded and diced)
- 1 - large green pepper (seeded and diced)
- 1 - medium onion (diced)
- 1 - cup mayonnaise
- 1 - cup sour cream
- - ground paprika - to taste and for color
- - salt - to taste
How To Make fiesta noodle salad

Step 1Cook pasta for about 20 minutes -- this prevents the mayonnaise and sour cream from being totally absorbed into the noodles. Rinse pasta with cold water and allow to completely cool.

Step 2Combine cooked pasta and all other ingredients, mix thoroughly and chill for at least 2 hours before serving. NOTE: If making the full recipe, you will need a very, very large bowl or pot to mix this in.
