I've always loved this recipe, but I've always felt the package ranch dressing was too salty. I decided to make a homemade ranch dressing to give this salad a fresh taste. I like this salad even more with this change to the recipe. I hope you do too.

Ingredients

  • 1 - large or 2 small cloves of garlic
  • 1 1/2 tablespoons salt
  • 1/4 cup parlsey
  • 3 tablespoons chives
  • 1 tablespoon fresh dill
  • 1 teaspoon fresh oregano
  • 1 teaspoon fresh tarragon
  • 2 - scallions
  • 1 teaspoon worcestershire sauce
  • 1/2 teaspoon paprika, sweet mild
  • 1/2 teaspoon cayenne pepper (optional)
  • 2-3 - dashes tabasco (optional)
  • 1 cup mayonaise
  • 1/2 cup sour cream
  • 1 cup buttermilk
  • 1 teaspoon white wine vinegar
  • SALAD PREPARATION
  • 1 bag cheese tortellini cooked and cooled
  • 1 cup ham (julienned)
  • 1 cup pea pods (lighly steamed)
  • 3/4 cup swiss cheese (cubed)
  • 2 - scallions (minced)
  • 1/4 cup red bell pepper (minced)
  • 2 cups homemade ranch dressing

How To Make creamy tortellini salad

  • Step 1
    Finely mince the garlic and then add the salt and mash it into a paste.
  • Step 2
    Finely mince all the fresh herbs.
  • Step 3
    Combine the mayonnaise, sour cream, add the minced herbs and garlic. Add the milk to thin the dressing.
  • Step 4
    Add the remaining ingredients. You can adjust the taste to your preference by adding more vinegar, paprika, cayenne or Worcestershire to your liking.
  • Step 5
    Cook tortellini according to package directions and cool.
  • Step 6
    Add ham, swiss cheese, pea pods, scallion and red bell pepper to the tortellini.
  • Step 7
    Add ranch dressing and combine all ingredients. Add more buttermilk if the dressing is too thick.
  • Step 8
    This salad tastes the best after it has been allowed to sit for several hours.
