creamy cucumber pasta salad-my way

My sister in law makes a great salad like this, with halved grape tomatoes & green olive slices. Everyone loves it, but the kids always seem to pick those two ingredients out. This is my version of it without them.Enjoy! **** You can easily cut this recipe in half .**********

Ingredients

  • 1 box ditalini pasta
  • 1 - cucumber, seeded & diced small
  • 1 - red bell pepper seeded & diced small
  • 2 - celery stalks, diced small
  • 1 medium sweet onion, diced small
  • 1/2 - block colby jack cheese, cubed very small
  • 1/2 cup sour cream
  • 1/2 cup mayonaise
  • 1/4 tablespoon dried dill
  • 2 teaspoons sugar
  • 1/4 tablespoon celery salt
  • 1/4 tablespoon galric powder
  • 1 teaspoon lemon juice
  • - salt & black pepper, to taste

How To Make creamy cucumber pasta salad-my way

  • Step 1
    Cook pasta according to directions( i cooked 1 minuter longer) Drain & cool. ( I put mine in the fridge while I went to the store.)
  • Step 2
    Dice veggies & cheese, add to cool pasta.
  • Step 3
    Mix the rest of the ingredients in a separate bowl until well blended. Taste, and adjust seasonings as needed.
  • Step 4
    Pour over pasta mixture & stir well. Refridgerate for at least 2 hours before serving.
  • Step 5
    Optional: Add some zesty Italian dressing the next day if it looks too dry.
