thea's spinach salad
This salad is a healthier version than those with a bacon dressing. I've been making this for many years and it's every bit as good.

Ingredients
- 10 ounces fresh spinach
- 6 slices bacon, cooked and crumbled
- 4 - mushrooms, sliced
- 3 - hard boiled eggs, sliced
- 2 teaspoons grated onion
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons dijon mustard
- 2 tablespoons red wine vinegar
- 8 tablespoons canola oil
- 1/2 teaspoon lemon juice
How To Make thea's spinach salad

Step 1Rinse and drain the spinach. Tear any large leaves and remove any long stems. Place spinach, bacon, mushrooms and eggs in a large bowl. Combine remaining ingredients with whisk. Pour over spinach, toss and serve.
