spinach salad with warm dressing
Without a doubt this is the best salad I have ever eaten. I used to order it from a cafe in Eaton Place. I did get the recipe from our local newspaper Winnipeg Free Press. So without further addo I will pass it on to you. Hopefully you will give it a try . I know you will not be sorry. It is just soooo good!

Ingredients
- - 8 cups fresh spinach
- - 8 slices of cooked bacon
- - 2 cups sliced mushrooms
- - 3 green onions chopped
- - 1 cup shredded mozzarella cheese
- - 4 hardboiled eggs sliced or chopped
- - dressing
- - 1 large onion diced
- - 2 tbsp bacon fat
- - 2tbsp water
- - 3 tbsp apple cider vinegar
- - 1/3 cup sugar
- - 1 cup mayonnaise
- - croutons store bought or homemade
How To Make spinach salad with warm dressing

Step 1Cook the bacon until crispy. Retain 2 Tbsp bacon fat

Step 2DRESSING: Saute diced onion in the bacon fat.

Step 3Add water, vinegar, sugar, mayonnaise and heat over low heat mixing until sugar is dissolved. Stir until smooth

Step 4SALAD: Place spinach in a bowl or individual serving plates. Add mushrooms, green onions and cheese

Step 5Pour dressing over top or serve on the side for individuals to serve themselves. If not using the dressing immediately keep warm until ready to use

Step 6Decorate with egg, bacon and croutons
