Spinach Salad with warm dressing

Without a doubt this is the best salad I have ever eaten. I used to order it from a cafe in Eaton Place. I did get the recipe from our local newspaper Winnipeg Free Press. So without further addo I will pass it on to you. Hopefully you will give it a try . I know you will not be sorry. It is just soooo good!

8 cups fresh spinach
8 slices of cooked bacon
2 cups sliced mushrooms
3 green onions chopped
1 cup shredded mozzarella cheese
4 hardboiled eggs sliced or chopped
1 large onion diced
2 tbsp bacon fat
2tbsp water
3 tbsp apple cider vinegar
1/3 cup sugar
1 cup mayonnaise
croutons store bought or homemade

How to Make Spinach Salad with warm dressing


  • 1Cook the bacon until crispy. Retain 2 Tbsp bacon fat
  • 2DRESSING: Saute diced onion in the bacon fat.
  • 3Add water, vinegar, sugar, mayonnaise and heat over low heat mixing until sugar is dissolved. Stir until smooth
  • 4SALAD: Place spinach in a bowl or individual serving plates. Add mushrooms, green onions and cheese
  • 5Pour dressing over top or serve on the side for individuals to serve themselves.
    If not using the dressing immediately keep warm until ready to use
  • 6Decorate with egg, bacon and croutons
