spinach salad with warm dressing

Without a doubt this is the best salad I have ever eaten. I used to order it from a cafe in Eaton Place. I did get the recipe from our local newspaper Winnipeg Free Press. So without further addo I will pass it on to you. Hopefully you will give it a try . I know you will not be sorry. It is just soooo good!

Ingredients

  • - 8 cups fresh spinach
  • - 8 slices of cooked bacon
  • - 2 cups sliced mushrooms
  • - 3 green onions chopped
  • - 1 cup shredded mozzarella cheese
  • - 4 hardboiled eggs sliced or chopped
  • - dressing
  • - 1 large onion diced
  • - 2 tbsp bacon fat
  • - 2tbsp water
  • - 3 tbsp apple cider vinegar
  • - 1/3 cup sugar
  • - 1 cup mayonnaise
  • - croutons store bought or homemade

How To Make spinach salad with warm dressing

  • Step 1
    Cook the bacon until crispy. Retain 2 Tbsp bacon fat
  • Step 2
    DRESSING: Saute diced onion in the bacon fat.
  • Step 3
    Add water, vinegar, sugar, mayonnaise and heat over low heat mixing until sugar is dissolved. Stir until smooth
  • Step 4
    SALAD: Place spinach in a bowl or individual serving plates. Add mushrooms, green onions and cheese
  • Step 5
    Pour dressing over top or serve on the side for individuals to serve themselves. If not using the dressing immediately keep warm until ready to use
  • Step 6
    Decorate with egg, bacon and croutons
