spinach & bacon salad w/ hot bacon dressing
My Gram used to make this all the time...brings back so many memories...enjoy! This recipe can easily be halved.

Ingredients
- 3/4 pound bacon, cooked and crumbled
- 1/2 cup green onions, sliced - green tops too
- 2 tablespoons flour
- salt - & pepper to taste
- 1/3 cup red wine vinegar
- 1 1/2 teaspoons sugar
- 1 cup beef or chicken broth
- 2 cups fresh sliced mushrooms
- 8 cups fresh spinach leaves - torn
- a few - hard boiled eggs, chopped are also great in this salad - optional
- fried - onions - like durkee , crumbles
How To Make spinach & bacon salad w/ hot bacon dressing

Step 1In a medium sized skillet, cook bacon until crisp, when finished, drain on paper towels, then crumble. Reserve 1/4 cup bacon grease. Place torn spinach and mushrooms in a large serving bowl and toss. Set aside.

Step 2Place reserved bacon grease back into the same pan as you fried the bacon. Over medium heat, cook the green onions until tender.

Step 3Stir in the flour and cook an additional minute.

Step 4Pour in the chicken broth, vinegar, sugar - cook until slightly thicken, won't take long.

Step 5Now, pour the hot dressing over the spinach - tossing to coat well. Sprinkle on the crumbled bacon and french fried onions if using. Salt and pepper to taste...
