How to Make Spinach & Bacon Salad W/ Hot Bacon Dressing

  1. In a medium sized skillet, cook bacon until crisp, when finished, drain on paper towels, then crumble. Reserve 1/4 cup bacon grease.

Place torn spinach and mushrooms in a large serving bowl and toss. Set aside.
  2. Place reserved bacon grease back into the same pan as you fried the bacon. Over medium heat, cook the green onions until tender.
  3. Stir in the flour and cook an additional minute.
  4. Pour in the chicken broth, vinegar, sugar - cook until slightly thicken, won't take long.
  5. Now, pour the hot dressing over the spinach - tossing to coat well. Sprinkle on the crumbled bacon and french fried onions if using. Salt and pepper to taste...
  6. Enjoy!!
