This recipe can easily be halved.

3/4 lb
bacon, cooked and crumbled
1/2 c
green onions, sliced - green tops too
2 Tbsp
& pepper to taste
1/3 c
red wine vinegar
1 1/2 tsp
1 c
beef or chicken broth
2 c
fresh sliced mushrooms
8 c
fresh spinach leaves - torn
a few
hard boiled eggs, chopped are also great in this salad - optional
onions - like durkee , crumbles

How to Make Spinach & Bacon Salad W/ Hot Bacon Dressing


  • 1In a medium sized skillet, cook bacon until crisp, when finished, drain on paper towels, then crumble. Reserve 1/4 cup bacon grease.

    Place torn spinach and mushrooms in a large serving bowl and toss. Set aside.
  • 2Place reserved bacon grease back into the same pan as you fried the bacon. Over medium heat, cook the green onions until tender.
  • 3Stir in the flour and cook an additional minute.
  • 4Pour in the chicken broth, vinegar, sugar - cook until slightly thicken, won't take long.
  • 5Now, pour the hot dressing over the spinach - tossing to coat well. Sprinkle on the crumbled bacon and french fried onions if using. Salt and pepper to taste...
  • 6Enjoy!!
