southwestern corn salad
My church has a potluck once a month. It's a great opportunity to try new foods, right? And this salad should not have worked in that setting -- it's too different than the norm for my area (Dutch Reformed). But, a lady named Pat tried it and brought it to share, and it is fabulous. And easy. Bless her for sharing the recipe, too!

Ingredients
- 2 cans corn, drained
- 1/2 cup chopped red onion
- 1 cup green or red pepper
- 1 cup mayo
- 2 cups cheddar cheese
- 10 ounces chili cheese corn chips, crushed
