southwestern corn salad

My church has a potluck once a month. It's a great opportunity to try new foods, right? And this salad should not have worked in that setting -- it's too different than the norm for my area (Dutch Reformed). But, a lady named Pat tried it and brought it to share, and it is fabulous. And easy. Bless her for sharing the recipe, too!

Ingredients For southwestern corn salad

  • 2 can
    corn, drained
  • 1/2 c
    chopped red onion
  • 1 c
    green or red pepper
  • 1 c
    mayo
  • 2 c
    cheddar cheese
  • 10 oz
    chili cheese corn chips, crushed

How To Make southwestern corn salad

  • 1
    Mix the first five ingredients together.
  • 2
    Add the corn chips just before serving.
