A great salad for summer meals.

Ingredients

  • 2 boxes uncle ben's wild & long grain rice, original
  • 2 pounds cooked shrimp, chopped
  • 1 cup green pepper, chopped
  • 1 cup celery, chopped
  • 1 jar chopped pimento (small jar)
  • 3/4 cup frozen peas, uncooked, defrosted
  • 1 cup sour cream
  • 1 cup mayonnaise
  • 3 tablespoons curry powder

How To Make shrimp curry rice salad

  • Step 1
    Cook rice according to box directions. Cool completely.
  • Step 2
    Mix rice, shrimp, green pepper, celery, pimentos and peas.
  • Step 3
    Mix sour cream, mayonnaise and curry powder.
  • Step 4
    Combine rice mixture with dressing mixture.
  • Step 5
    Refrigerate at least two hours. Better made day before to chill overnight.
