Nothing fancy about this Turkey Salad, but sometimes simple is better. Everyone loved it. Enjoy!

Ingredients

  • 2 pounds turkey fillets or turkey breast
  • salt - & pepper
  • water - for roasting
  • 1/3 cup mayonnaise - more if needed
  • 1/4 cup miracle whip
  • 6 - 8 - slices, bread and butter sweet pickle chips
  • 1 teaspoon dijon mustard
  • 1/2 cup sweet onion, chopped
  • 2 - small - med stalks celery, chopped

How To Make ~ roasted turkey salad ~ cassies

  • Step 1
    Preheat oven to 325 Degree F. Place fillets in oven proof dutch oven or roaster. Salt & pepper turkey. Add enough water so turkey doesn't stick. Cover & bake for 40 - 45 minutes or until turkey is tender. **A thicker breast may take longer to bake than the slices I used. Remove from pan and cool enough to handle.
  • Step 2
    Shred or chop turkey and place in a medium bowl, along with pickles, onion and celery. Mix dressings salt, pepper and mustard. Fold dressing into turkey and mix until thoroughly blended. If need more mayonnaise, add a little at a time until desired consistency.
  • Step 3
    Chill and serve in your favorite sandwich bread, croissant etc...
