mozzarella tomato salad

Made this the day before and let all the ingredients marinate. It is very good. Great for summertime.

Ingredients For mozzarella tomato salad

  • 5
    fresh tomatoes, diced bite size, use red and yellow
  • 1
    medium vidalia onion in thin rings
  • 1/2 c
    extra virgin olive oil
  • 1/2 c
    fresh basil chopped
  • 8 oz
    fresh mozzarella cheese, i used mozzarella pearls cut in half
  • 1/4 c
    balsamic vinegar
  • 1 clove
    garlic, minced fine
  • 1/4 c
    shredded parmesan cheese

How To Make mozzarella tomato salad

  • 1
    Combine the tomatoes, onion rings and fresh basil in a salad bowl. Slice the Mozzarella balls in half. Whisk together the olive oil, balsamic vinegar and garlic. Drizzle over the salad and then sprinkle the Parmesan cheese over the top. I like to finish with a little cracked pepper on top. It's so easy, but so good.
