Given to me by Auntie Jewel. We usually had this with Ham. Note: we did not have pimento in ours but you can add if so desired.

  • 1 can(s)
    corn
  • 1 can(s)
    english peas
  • 1 can(s)
    green beans
  • 1 can(s)
    sliced carrots
  • 1 medium
    onion chopped
  • 1 medium
    bell pepper chopped
  • 1 c
    celery chopped
  • 3/4 c
    vinegar
  • 3/4 c
    vegetable oil
  • 6 Tbsp
    sugar or splenda
  • 1/2 tsp
    salt, pepper, garlic powder to taste

How to Make Marinated Vegetable Salad

Step-by-Step

  1. Drain canned vegetables and pour in large plastic bowl w/lid. Add chopped onion, bell pepper and celery.
  2. Mix in small bowl, vinegar, oil, sugar and spices. Add to vegetable bowl. Marinate in refrigerator over night. Stir several times. Keeps well.
