kristin's seafood salad
This is my family's favorite recipe for lunch. Either on bread or with lettuce as a salad. I use the fake crab pieces (pollock or cod), and sometimes add shrimp. I don't have specific quantities for the mayo because I just put as much as I like. Some people like more. I have substituted cooked chicken for the seafood and made chicken salad too. I hope you like it!

Ingredients
- 4 cups cooked seafood (shrimp) or imitation crab meat (chopped)
- 1/2 cup mayonnaise
- 1 teaspoon dijon mustard
- 1/8 teaspoon hot pepper sauce
- 1/2 tablespoon capers (finely chopped) or to taste
- 2 teaspoons parsley flakes (can use fresh)
- 1 teaspoon dried chives (can use fresh)
- 1/2 cup celery (chopped)

Step 1Chop seafood and celery

Step 2Mix rest of the ingredients to make the dressing

Step 3Mix all together and chill well

Step 4I love it just with lettuce or in a sandwich. I think it tastes even better the next day. I have used this same dressing and substituted chicken (for the seafood) and made a chicken salad too. Enjoy!
