greek garbanzo bean salad

This is a great salad recipe that's perfect for any Greek-themed dinner.

Ingredients

  • 30 ounces garbanzo beans, drained
  • 14 ounces can artichoke hearts, drained and quartered
  • 12 ounces jar pitted kalamata olives, drained
  • 1 small yellow bell pepper, chopped
  • 2 large cucumbers, halved lengthwise and sliced
  • 1 cup - grape tomatoes (i like to cut them in half, but it's not necessary)
  • 1/2 large red onion, chopped
  • 2 cloves garlic, minced
  • 4 ounces crumbled feta cheese
  • 1/4 cup - greek dressing (or italian dressing)
  • 1/2 large lemon, the juice of
  • 1 teaspoon crushed rosemary
  • - salt and pepper, to taste

How To Make greek garbanzo bean salad

  • Step 1
    Combine all ingredients in a large bowl. Toss well and refrigerate 1-2 hours before serving.
  • Step 2
    Serve chilled.
