egg salad (plan b)
If you have farm fresh eggs and plan to make deviled eggs, you should have a "Plan B", just in case. You know at least some (if not most) of those beautiful fresh eggs are going to be torn up when you try to peel them! That's just the way it is with really fresh eggs. You probably won't hear any complaints when you serve this "Plan B" instead (I never have!)

Ingredients
- 8 large hard boiled eggs, peeled
- 1 1/2 to 2 teaspoons sweet pickle juice
- 1/8 teaspoon salt
- 1 teaspoon sugar
- 1/2 cup Miracle Whip salad dressing
- 2 teaspoons prepared yellow mustard
- 2 teaspoons sweet pickle relish, optional
How To Make egg salad (plan b)

Step 1Chop the eggs medium to medium-fine and place in a medium mixing bowl.

Step 2Sprinkle with pickle juice, salt and sugar.

Step 3Stir to mix.

Step 4Add the Miracle Whip and yellow mustard and mix well. Add the sweet pickle relish, if desired.

Step 5Cover and refrigerate until serving. Cover and refrigerate leftovers. Recipe may be doubled.
