delicious & colorful bean salad - cassies

This salad has a Mexican flair...so very flavorful...it would make a wonderful side dish for your Memorial Day cookout... Enjoy!

Ingredients

  • 1- 15 cans black beans, rinsed
  • 1 - 15 cans garbanzo beans, rinsed
  • 1 - 15 cans dark kidney beans, drained
  • 6 ounces colby jack cheese - cubed
  • 1 1/2 cups frozen sweet corn, thawed and drained - or use fresh
  • 1/2 - 3/4 cups celery, sliced thin
  • 5 - green onions, sliced
  • 1/2 cup sweet onion, diced
  • 1 small red pepper, diced
  • 1 1/2 cups picante sauce
  • 2 cloves garlic, minced
  • 3 tablespoons extra virgin olive oil
  • 3 tablespoons lemon juice
  • 1 teaspoon sugar
  • 1 1/2 - 2 teaspoons dry cumin

How To Make delicious & colorful bean salad - cassies

  • Step 1
    Drain all beans well. Place in a large bowl. Add the prepared vegetables & cheese and toss.
  • Step 2
    In another bowl, add Picante sauce, garlic, oil, lemon juice, sugar and cumin. Whisk well and pour over the bean mixture. Mix well, then cover and chill for several hours, or overnight.
  • Step 3
    Enjoy!
