Ingredients
- 1/4 cup sweet chili sauce
- 2 tablespoons seasoned rice wine vinegar
- 1 large cucumber, peeled, thinly sliced
- 1 cup matchstick carrots
- 1/2 cup presliced green onions
- 1/2 cup chopped red sweet pepper
- 1 small tomato chopped for garnish (optional)
How To Make cucumber carrot salad

Step 1Whisk chili sauce and vinegar in medium bowl until blended.

Step 2Peel cucumber; cut in half lengthwise and slice. Add cucumber and remaining ingredients to sauce mixture; toss to coat. Chill until ready to serve.

Step 3Very Good. Double recipe or just use 2 cucumbers.
