creamy cucumber salad

This salad says, "Summer." to me. My mother made this every summer for our back yard picnics. After she passed I haven't been able to recreate it until now. Thanks Mom for wonderful memories.

Ingredients

  • 2 cups thinly sliced cucumbers (about 4 small or 2 large)
  • 1 teaspoon salt
  • 1 cup thinly sliced onion
  • 1 cup sour cream, mayonnaise or yogurt
  • 3-4 tablespoons apple cider vinegar
  • - sugar to taste

How To Make creamy cucumber salad

  • Step 1
    Pare both cucumbers and onion and slice very thin.
  • Step 2
    Toss with salt and put into a strainer. Place into a bowl to catch the juices. Let set for 30 minutes. Rinse and drain.
  • Step 3
    Combine sour cream, mayonnaise or yogurt with vinegar and sugar.
  • Step 4
    Refrigerate for several hours or overnight for the flavors to blend. Stir before serving.
