creamy cucumber salad
This salad says, "Summer." to me. My mother made this every summer for our back yard picnics. After she passed I haven't been able to recreate it until now. Thanks Mom for wonderful memories.

Ingredients
- 2 cups thinly sliced cucumbers (about 4 small or 2 large)
- 1 teaspoon salt
- 1 cup thinly sliced onion
- 1 cup sour cream, mayonnaise or yogurt
- 3-4 tablespoons apple cider vinegar
- - sugar to taste
How To Make creamy cucumber salad

Step 1Pare both cucumbers and onion and slice very thin.

Step 2Toss with salt and put into a strainer. Place into a bowl to catch the juices. Let set for 30 minutes. Rinse and drain.

Step 3Combine sour cream, mayonnaise or yogurt with vinegar and sugar.

Step 4Refrigerate for several hours or overnight for the flavors to blend. Stir before serving.
