This is an easy salad that you can prepare the day before for your Memorial Day Barbecue or for any occasion! Delicious!! :)

Ingredients
- 2 cans beans,15 oz. (black beans,pinto or black eye,your choice)
- 1 package cheddar cheese, shredded,12 oz.
- 1 medium bell pepper,diced
- 1 small cilantro, fresh bunch
- 4 medium roma tomatoes,ripe,diced
- 1 small can sliced black olives
- 1/2 teaspoon salt
- 1/2 teaspoon chili powder
- 1/2 teaspoon cumin,ground
- 1 medium lime,juiced and zest
- 3 cups corn bread,cubed
- 1 pint sour cream
- 1/2 cup mayonnaise
- 4 medium scallions,diced
How To Make cornbread salad

Step 1Combine the mayonnaise with the sour cream,diced scallions(reserve some for garnish)set to the side. Combine the diced peppers,plum tomatoes,cilantro,lime juice,lime zest,chili powder,salt and cumin,set to the side. Open and rinse the beans of your choice,drain well,set to the side.

Step 2Using a clear bowl or trifle dish begin layering the salad beginning with half of the cubed corn bread,one can of the beans,half of the tomato mixture,shredded cheese and then the sour cream,repeat. Garnish with scallions and shredded cheese and refrigerate until chilled and set.

Step 3Serve with assorted tortilla chips and enjoy!!
