Love peas and love this salad...I had some veggies I needed to use up from the holiday...this salad is how I chose to use them...very tasty indeed...enjoy!

Ingredients

  • 16 ounces frozen peas, thawed and drained
  • 2 - baby carrots, shredded
  • 1/2 - cucumber, peeled and diced small
  • 2 - 3 ounces ham, julienned
  • 1 cup shredded, cheddar cheese
  • 2 ounces swiss cheese, cubed
  • 1 cup cashew halves - if not serving till the next day - add these then to retain their crunchiness
  • 1 stalk celery sliced thin or diced
  • 1 cup red onion, diced
  • 2 - green onions, tops included, sliced
  • DRESSING
  • 1/2 cup cheese ranch ( is what i used ) dressing or regular ranch
  • 1/4 cup sour cream
  • 1/4 - 1/2 cup mayonnaise
  • 1/2 teaspoon dried or fresh chopped dill
  • 1 tablespoon sugar
  • 1/2 teaspoon dried mustard
  • 1/2 teaspoon pepper
  • 1/2 teaspoon kosher salt or to taste

How To Make cassies crunchy & creamy pea salad

  • Step 1
    In a medium sized bowl add the peas and all other veggies and cheeses. ( add the cashews before serving )
  • Step 2
    In another small bowl; mix dressing ingredients...adjust seasoning to your own taste if needed. Stir dressing into the pea mixture; coat evenly and refrigerate till chilled, at least a few hours till flavors mesh.
  • Step 3
    Enjoy...even better the next day, if there are any leftovers...
