cassies crab salad

This delicious salad is great on a bun, or on a bed of fresh spinach or greens...the addition of sweet peas and corn added great flavor and texture..this was our lunch...hubby had his on hot dog buns and couldn't get enough...he ate three...Delicious!!! Enjoy!

Ingredients

  • 1 - 8 ounces imitation crabmeat - chunked
  • 2 - hard boiled eggs, chopped
  • 1/2 cup frozen peas, thawed and drained
  • 1/2 cup frozen sweet corn, thawed and drained
  • 1 - 2 - green onion, sliced - tops too
  • 1 stalk celery
  • 1/2 cup shredded cheese - your choice, i didn's use this time, but is a good addition
  • DRESSING
  • little - over 1/3 cup mayonnaise
  • 1/4 cup sour cream
  • 1/2 teaspoon salt or to taste
  • 1/2 teaspoon pepper
  • 1/2 teaspoon dried dill
  • 1 teaspoon lemon juice
  • 1 1/2 - 2 teaspoons sugar

How To Make cassies crab salad

  • Step 1
    Mix all dressing ingredients in a small bowl, taste and season more if needed.
  • Step 2
    Toss all salad ingredients in a medium sized bowl; spoon on dressing and toss to coat evenly.
  • Step 3
    Serve on a bed of spinach or can be used for sandwiches, either way it's delicious! Enjoy!
