cassies cauli - slaw - delish!

I had a medium head of cauliflower I needed to use up, so this is what I made with it...I have to be honest...I like it better than regular coleslaw...YUM! Enjoy!

Ingredients

  • 21 ounces or 1 medium head - chopped, cauliflower - works great in food processor
  • 1/2 cup shredded carrots - or i chopped mine in processor
  • 2 tablespoons minced red or sweet onion - optional
  • DRESSING
  • dash - fresh ground pepper
  • 1 cup good quality mayonnaise - i always use helmanns
  • 2 tablespoons each - cider vinegar & sugar - more sugar if desired
  • 1 teaspoon each - celery seed & dry mustard
  • 3/4 - 1 teaspoons season salt
  • paprika - for garnish - optional

How To Make cassies cauli - slaw - delish!

  • Step 1
    I used my food processor and added 1/2 the cauliflower florets, pulsed about 5 times, emptied and added remainder and pulsed another 4 - 5 times...you don't want it ground so much that is mush though...should be about the texture of regular coleslaw. Empty in a bowl, then I did the same with baby carrots.
  • Step 2
    Add the carrots to the cauliflower, and toss. If adding onion, toss it in now. Set aside.
  • Step 3
    Dressing: Whisk all dressing ingredients together. Taste to see if needs more sugar or seasoning, depending on your own tastes.
  • Step 4
    Pour dressing over chopped veggies and mix well. I garnished with a few pinches of paprika Refrigerate for a couple hours before serving...
