Wonderfully tangy salad with lots of fiber.

Ingredients

  • 2 cans black-eyed peas
  • 1/2 cup red onion rings
  • 1/2 cup chopped green pepper
  • 1 - small garlic clove, minced
  • 1 - packet sweetener
  • 1/4 cup vinegar
  • 1 tablespoon oil
  • - salt and pepper to taste
  • - dash of hot sauce

How To Make black-eyed pea salad

  • Step 1
    Combine peas, onion, green pepper and garlic.
  • Step 2
    In a small bowl, stir together all remaining ingredients and pour over vegetable mixture.
  • Step 3
    Cover and chill for at least 2 hours
