Easy to make, delicious salad, with different flavors that compliment each other. It's great with chicken or turkey. Great to make when you're short on time.

  • 4 c
    lettuce, in bite sized pieces (half romaine, if desired)
  • 1 can(s)
    (11 ounce) mandarin oranges, drained
  • 1
    small cucumber, sliced
  • 1/3 c
    sliced almonds or chopped walnuts
  • 1/3 c
    shredded coconut
  • 1/4 c
    sweet and sour dressing or raspberry vinaigrette dressing
  • 1 c
    cheese croutons (optional)

How to Make Mandarin Orange Salad


  1. In a large salad bowl, combine lettuce, oranges and cucumber.
    Add nuts and coconut.
  2. Add dressing and toss.
    Top with croutons and toss.
