endive and watercress salad with bacon cider dress

I really enjoy the "sharp" tasting lettuces, so this is a favorite of mine. The dressing with the smoky bacon, Dijon, and maple syrup cut the peppery taste of the lettuces. Use quality ingredients for the dressing for best results.

Ingredients

  • 4 slices center cut bacon
  • 3 tablespoons extra-virgin olive oil
  • 2 1/2 tablespoons cider vinegar
  • 2 tablespoons maple syrup
  • 1 teaspoon dijon mustard
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon black pepper, freshly ground
  • 1 clove garlic, minced
  • 4 cups belgian endive, diagonally cut
  • 3 cups radicchio, chopped
  • 1 cup watercress, trimmed

How To Make endive and watercress salad with bacon cider dress

  • Step 1
    Heat a medium nonstick skillet over medium heat. Add the bacon to the pan; cook until crisp. Remove the bacon from the pan, reserving 2 teaspoons drippings in the pan; coarsely chop the bacon.
  • Step 2
    Combine the 2 teaspoons bacon drippings, oil, and next 6 ingredients in a large bowl, stirring with a whisk.
  • Step 3
    Add the remaining ingredients; toss well. Sprinkle with the chopped bacon. Enjoy!
