endive and watercress salad with bacon cider dress
I really enjoy the "sharp" tasting lettuces, so this is a favorite of mine. The dressing with the smoky bacon, Dijon, and maple syrup cut the peppery taste of the lettuces. Use quality ingredients for the dressing for best results.

Ingredients
- 4 slices center cut bacon
- 3 tablespoons extra-virgin olive oil
- 2 1/2 tablespoons cider vinegar
- 2 tablespoons maple syrup
- 1 teaspoon dijon mustard
- 1/4 teaspoon kosher salt
- 1/4 teaspoon black pepper, freshly ground
- 1 clove garlic, minced
- 4 cups belgian endive, diagonally cut
- 3 cups radicchio, chopped
- 1 cup watercress, trimmed
How To Make endive and watercress salad with bacon cider dress

Step 1Heat a medium nonstick skillet over medium heat. Add the bacon to the pan; cook until crisp. Remove the bacon from the pan, reserving 2 teaspoons drippings in the pan; coarsely chop the bacon.

Step 2Combine the 2 teaspoons bacon drippings, oil, and next 6 ingredients in a large bowl, stirring with a whisk.

Step 3Add the remaining ingredients; toss well. Sprinkle with the chopped bacon. Enjoy!
