I really enjoy the "sharp" tasting lettuces, so this is a favorite of mine. The dressing with the smoky bacon, Dijon, and maple syrup cut the peppery taste of the lettuces. Use quality ingredients for the dressing for best results.

Ingredients

  • 4 slice
    center cut bacon
  • 3 Tbsp
    extra-virgin olive oil
  • 2 1/2 Tbsp
    cider vinegar
  • 2 Tbsp
    maple syrup
  • 1 tsp
    dijon mustard
  • 1/4 tsp
    kosher salt
  • 1/4 tsp
    black pepper, freshly ground
  • 1 clove
    garlic, minced
  • 4 c
    belgian endive, diagonally cut
  • 3 c
    radicchio, chopped
  • 1 c
    watercress, trimmed

How to Make Endive and Watercress Salad with Bacon Cider Dress

Step-by-Step

  1. Heat a medium nonstick skillet over medium heat. Add the bacon to the pan; cook until crisp. Remove the bacon from the pan, reserving 2 teaspoons drippings in the pan; coarsely chop the bacon.
  2. Combine the 2 teaspoons bacon drippings, oil, and next 6 ingredients in a large bowl, stirring with a whisk.
  3. Add the remaining ingredients; toss well. Sprinkle with the chopped bacon. Enjoy!
