Oriental cucumber and onion salad

This is a salad I have been fixing for years. We usually have it with Oriental food but I also fix it when I have lots of cucumbers from the garden. It is refreshing and keeps well in the refrigerator. I did say it takes about 30 minutes to prepare because of the time needed to salt and let the cucumbers drain.

1 or 2 medium
cucumbers cut in half length wise and sliced
1/2 small
onion sliced
seasoned rice vinegar. i like marukan brand
green onion (green top only) or chives sliced

How to Make Oriental cucumber and onion salad


  • 1Put cucumber into a strainer and sprinkle with salt. Let sit to drain for about 15 to 20 minutes.
  • 2Put sliced onion and drained cucumber into a bowl and add the seasoned rice vinegar until it comes about half way up the mix. Stir, cover, and refrigerate until ready to serve.
  • 3Add green onion tops or chives to the top. Enjoy!
