oriental cucumber and onion salad

This is a salad I have been fixing for years. We usually have it with Oriental food but I also fix it when I have lots of cucumbers from the garden. It is refreshing and keeps well in the refrigerator. I did say it takes about 30 minutes to prepare because of the time needed to salt and let the cucumbers drain.

Ingredients For oriental cucumber and onion salad

  • 1 or 2 md
    cucumbers cut in half length wise and sliced
  • 1/2 sm
    onion sliced
  • seasoned rice vinegar. i like marukan brand
  • green onion (green top only) or chives sliced

How To Make oriental cucumber and onion salad

  • 1
    Put cucumber into a strainer and sprinkle with salt. Let sit to drain for about 15 to 20 minutes.

    Put sliced onion and drained cucumber into a bowl and add the seasoned rice vinegar until it comes about half way up the mix. Stir, cover, and refrigerate until ready to serve.

    Add green onion tops or chives to the top. Enjoy!
