claudia's cranberry salad
This is my variation of my mother-in-law's cranberry salad. She always made it for Thanksgiving and Christmas. My husband doesn't feel like he has had his holidays without it.

Ingredients
- 12 ounces fresh or frozen cranberries
- 1 large orange, zested (reserve zest) and peeled
- - zest of one orange
- 1 large (20 oz) crushed pineapple, not drained
- 2 cups sugar
- 1 cup pecans, chopped
- 2 small (3 oz each) pkg black cherry jell-o
- 2 cups boiling water
How To Make claudia's cranberry salad

Step 1Grind cranberries and peeled orange with food grinder or food processor.

Step 2Stir in pineapple (including liquid from can), orange zest and sugar. Let stand while dissolving Jell-O in 2 cups boiling water.

Step 3Add cranberry mixture to Jell-O. Refrigerate to set.
