Bacon Romaine Salad w/ Lemon Dressing

This is a light refreshing salad that i made up fpr my mom on Mother's day 2010. She was please that I'm learning to rely on the tricks she's taught me.

  • 2 bunch
    romaine lettuce head
  • 5 slice
    bacon (thick)
  • 2 large
    eggs, hard boiled (wedge cut)
  • 2 small
    mini red bell peppers (thin sliced stripes)
  • 1/4 c
    green onions
  • 1/2 c
    glazed walnuts
  • 1/2 c
    dried cranberries (raspberry flavored are great)
  • 1/2 c
    diced fresh strawberries

  • 1/2 c
    miracle whip
  • 1/2 c
    lemon juice
  • 1/2 c
    apple juice
  • 3 Tbsp
    olive oil, extra virgin
  • 2 Tbsp
    sweet basil
  • 1 pkg
    equal (two if you need a sweeter taste)

How to Make Bacon Romaine Salad w/ Lemon Dressing


  1. Toss all ingredients (except the bacon and eggs) in a large salad bowl. Top the salad with bacon and eggs. Serve with the Summer Lemon Dressing.
  2. Blend lemon juice and Miracle Whip in blender at high speed; add basil and olive oil. Gradually add the apple juice to your desired thickness. Add Equal one pack at a time to you desired sweetness. Chill and serve.
