bacon romaine salad w/ lemon dressing
This is a light refreshing salad that i made up fpr my mom on Mother's day 2010. She was please that I'm learning to rely on the tricks she's taught me.

Ingredients
- 2 bunches romaine lettuce head
- 5 slices bacon (thick)
- 2 large eggs, hard boiled (wedge cut)
- 2 small mini red bell peppers (thin sliced stripes)
- 1/4 cup green onions
- 1/2 cup glazed walnuts
- 1/2 cup dried cranberries (raspberry flavored are great)
- 1/2 cup diced fresh strawberries
- SUMMER LEMON DRESSING
- 1/2 cup miracle whip
- 1/2 cup lemon juice
- 1/2 cup apple juice
- 3 tablespoons olive oil, extra virgin
- 2 tablespoons sweet basil
- 1 package equal (two if you need a sweeter taste)
How To Make bacon romaine salad w/ lemon dressing

Step 1Toss all ingredients (except the bacon and eggs) in a large salad bowl. Top the salad with bacon and eggs. Serve with the Summer Lemon Dressing.

Step 2Blend lemon juice and Miracle Whip in blender at high speed; add basil and olive oil. Gradually add the apple juice to your desired thickness. Add Equal one pack at a time to you desired sweetness. Chill and serve.
