Refreshing salad for those hot summer nights. Makes a colorful side dish presentation.

Ingredients

  • SALAD FIXINGS
  • 1 bunch romaine or boston lettuce
  • 1 package baby spinach
  • 3 large red delicious apples (or your choice)
  • 2 large golden delicious apples (or your choice)
  • 2 large granny smith apples (or your choice)
  • 1 large firm ripe mango
  • 1 cup chopped nuts (your choice)
  • 1 pound swiss cheese (or your choice) cut into bite sized pieces
  • DRESSING INGREDIENTS:
  • 1 cup olive oil
  • 1/4 cup granulated sugar
  • 1/3 cup wine vinegar
  • 1 tablespoon poppy seeds

How To Make apples of my eye salad (sallye)

  • Step 1
    MAKING THE DRESSING: Place oil, sugar, and vinegar in a glass jar with an airtight lid. Place lid on tightly and shake vigorously until well blended Remove lid, add poppy seeds, replace lid and continue shaking gently until poppy seeds are blended into dressing. Place in fridge covered until ready to use. OPTION: You can use store-bought poppy seed dressing if you wish
  • Step 2
    PREPARING THE SALAD: Tear lettuce leaves into bite sized pieces. Place in large salad bowl Add spinach to lettuce and toss until mixed. Set aside Peel mango and cut into bite size pieces. Set aside Core the apples, but do not peel. Cut into bite size pieces Sprinkle with lemon juice to keep from turning Add apples, cheese, and nuts to lettuce/spinach mixture and toss to blend. Add mango and toss gently.
  • Step 3
    Pour dressing over the salad and toss with wooden spoons to mix well. Serve immediately
