Ingredients

  • 2 cups cooked chicken
  • 1 cup chopped celery
  • 1 cup mayonnaise
  • 1/2 - 1 teaspoons curry powder
  • 20 ounces can chunk pineapple, drained
  • 11 ounces can mandarin oranges, drained
  • 1/2 cup flaked coconut
  • - salad greens, optional
  • 3/4 cup salted panut or cashew halves

How To Make tropical chicken salad

  • Step 1
    Place chicken and celery in a large bowl. Combine mayo and curry powder; add to chicken mixture and mix well. Cover and chill for at least 30 minutes.
  • Step 2
    Before serving, add the pineapple, bananas, oranges an coconut; toss gently. Serve on salad greens if desired. Sprinkle with nuts.
