When my husband was going through instructions to join the Catholic Church (RCIA), I made this for the class one night. I made enough for each person to have 3 sandwiches. They ended up picking the crumbs off the tray. Soon after, I was asked to take charge of the men's homeless shelter meals that we cook for once every three months and our churches bereavement meals. I was so honored. I hope you enjoy this recipe as much as they did.

Ingredients For rcia chicken salad

  • 4 c
    roasted chicken. i roast a whole chicken with a genorous amount of salt, rosemary, garlic powder, onion powder, paprika, pepper
  • 1 c
    mayonnaise
  • 1 c
    pecans, in pieces
  • 1/2 c
    dried cranberries
  • 2 stalk
    celery
  • 1 c
    crisp firm sweet apple (your choice)

How To Make rcia chicken salad

    Dice 4 cups of your favorite roasted chicken in 1/2 inch cubes and put in large bowl

    add the other ingredients and mix well.

    refrigerate at least 2 hours
  • 4
    after refrigeration put a generous helping on whatever sweet roll or yeast bread roll of your choice
