Really easy to make. No cooking and a low calorie meal. I started making this years ago when I was on Weight Watchers for a quick dinner.

Ingredients

  • 4 - hearts of romaine lettuce
  • - leftover boneless chicken or rotisserie chicken
  • 2 cups four bean salad, jarred
  • 1 cup sargento mexican blend cheese, traditional cut
  • 1 cup salsa, jarred

How To Make easy mexican chicken salad

  • Step 1
    Wash the lettuce and tear into bite size pieces.
  • Step 2
    Cube the chicken.
  • Step 3
    Drain the bean salad.
  • Step 4
    Toss the lettuce, chicken and beans together, top with salsa and cheese.
