My dear friend Paula shared this recipe with me many years ago. It's great for summer BBQ's or just for a fresh change of pace.
I made this for lunch yesterday and my Honey loved it.

  • 4 c
    lettuce, shredded thin
  • 1 lb
    chicken breast, cooked sliced thin strips
  • 1/2 bag(s)
    crunchy chow mein noodles, or 1 can
  • 1/2 bag(s)
    garlic ginger wonton strips, or fry your own
  • 4 Tbsp
    toasted slivered almonds
  • 8 Tbsp
  • 4 Tbsp
    sesame oil
  • 2/3 c
    red wine vinegar
  • 1 c
    peanut oil
  • ·
    salt & pepper
  • 1 can(s)
    mandarin oranges, drained

How to Make Chinese Chicken Salad


  1. In a blender prepare the dressing: sugar, sesame oil, red wine vinegar, peanut oil, salt and pepper.
  2. In a large bowl: lettuce, chow mein, wonton strips,oranges and almonds
  3. Add in the prepared dressing slowly until you get the desired amount of dressing on your salad. I usually mix only what I'm going to use & have dressing left over. It makes a really big salad.
  4. It gets soggy quick so be sure to hold off on tge dressing until you are ready to serve.
