My dear friend Paula shared this recipe with me many years ago. It's great for summer BBQ's or just for a fresh change of pace. I made this for lunch yesterday and my Honey loved it.

Ingredients

  • 4 cups lettuce, shredded thin
  • 1 pound chicken breast, cooked sliced thin strips
  • 1/2 bag crunchy chow mein noodles, or 1 can
  • 1/2 bag garlic ginger wonton strips, or fry your own
  • 4 tablespoons toasted slivered almonds
  • 8 tablespoons sugar
  • 4 tablespoons sesame oil
  • 2/3 cup red wine vinegar
  • 1 cup peanut oil
  • - salt & pepper
  • 1 can mandarin oranges, drained

How To Make chinese chicken salad

  • Step 1
    In a blender prepare the dressing: sugar, sesame oil, red wine vinegar, peanut oil, salt and pepper.
  • Step 2
    In a large bowl: lettuce, chow mein, wonton strips,oranges and almonds
  • Step 3
    Add in the prepared dressing slowly until you get the desired amount of dressing on your salad. I usually mix only what I'm going to use & have dressing left over. It makes a really big salad.
  • Step 4
    It gets soggy quick so be sure to hold off on tge dressing until you are ready to serve.
