2 lb
red potatoes, unpeeled and uncut
1 c
1/4 c
vinaigrette salad dressing
2 Tbsp
dijon mustard
1 large
dill pickle, coarsely chopped
1/2 c
thinly-sliced green onions
1/2 tsp
each salt and pepper

How to Make Zingy Potato Salad


  • 1In a medium pan, cover whole potatoes with cold water. Bring to boil, reduce heat to simmer, and cook until tender, 15-20 minutes. Drain. Set aside to cool.
  • 2In medium bowl, combine rest of ingredients. Stir. When potatoes are cool enough to handle, cut into large bite-sized pieces and place in serving bowl. Add dressing to potato mixture and stir well. Cover and refrigerate until ready to serve.
