This is the best potato salad ever!

Ingredients

  • 2 pounds red potatoes, unpeeled and uncut
  • 1 cup mayonnaise
  • 1/4 cup vinaigrette salad dressing
  • 2 tablespoons dijon mustard
  • 1 large dill pickle, coarsely chopped
  • 1/2 cup thinly-sliced green onions
  • 1/2 teaspoon each salt and pepper

How To Make zingy potato salad

  • Step 1
    In a medium pan, cover whole potatoes with cold water. Bring to boil, reduce heat to simmer, and cook until tender, 15-20 minutes. Drain. Set aside to cool.
  • Step 2
    In medium bowl, combine rest of ingredients. Stir. When potatoes are cool enough to handle, cut into large bite-sized pieces and place in serving bowl. Add dressing to potato mixture and stir well. Cover and refrigerate until ready to serve.
