yeye's sweet hot potato salad
I grew up in the South where potato salad was always a side dish no matter what the family gathering. The thing is, there are so many ways to make it and not all are pleasing to everyone's palate. Over the years my three children expressed their likes and dislikes, especially when it came to potato salad. So with that in mind, I was able to come up with this very tasty and flavorful recipe. It was a big hit on Labor's Day with everyone. All three kids loved it and hopefully you will too! Enjoy!!!

Ingredients
- 8 large russet potatoes (boiled with skin on)
- 6 large eggs, hard boiled
- 1/2 medium yellow onion
- 1/2 large green bell pepper
- 2 cloves garlic (fresh)
- 3 tablespoons sweet pickle relish
- 1/2 cup miracle whip lite) salad dressing
- 1/4 cup dijon mustard
- 2-3 tablespoons bahama mama hot pickle juice
- 1 teaspoon sugar
- 1 teaspoon lemon pepper seasoning
- 1 teaspoon ground black pepper
- 1-2 pinch salt
- GARNISH TOPPING
- 1 teaspoon parsley flakes
- 1/4 teaspoon paprika
How To Make yeye's sweet hot potato salad

Step 1Prep: Remove skins from cooked potatoes as well as shells from hardboiled eggs(LOL),cut potatoes into small cubes. Chop eggs into crumbles. Dice onion, bellpepper and garlic as fine as you can get them. note* Bahama Mama hot pickles are brandname,the juice from any hot pickles will do ( as long as it's "HOT").

Step 2Combine: Potatoes, eggs, onion, bellpepper, garlic, relish in a large mixing bowl. Sprinkle in sugar, lemon pepper season, black pepper and salt. Mix all to evenly distribute ingredients(Use large two-prong fork instead of spoon). Add salad dressing, mustard and pickle juice and mix with a big spoon until you get a well blended salad. Sprinkle parsley flakes then paprika to add beauty. Chill in frig or eat right away. Enjoy!!!
