vegged out potato salad

This a great way to get that yummy potato salad you crave. But with about 1/2 the fat. I actually got this from Rachel Ray....And it was Kid tested by very own 9 year old who only like Pizza, Chicken Nuggets and French Fries....She liked it!

Ingredients

  • 1 package cherry tomatoes
  • 1/2 cup chopped celery
  • 1 large cucumber cut into chunks
  • 1/4 cup cilantro or parsley
  • 1 pound potatoes
  • 1/4 cup light or reduced fat may or light sour cream
  • 2-3 tablespoons sweet relish
  • 1/4 cup onions
  • 2-3 tablespoons yellow mustard
  • 1-2 pinch of salt and pepper (season to your liking)

How To Make vegged out potato salad

  • Step 1
    Boil Potatoes till they are soft. Chop Potatoes into chunks
  • Step 2
    Chop Celery, Cucumber and Cilantro or Parsley
  • Step 3
    In a Bowl Mix Fat Free Mayo or Sour cream with Sweet relish, yellow mustard, onions, and seasoning and Mix together.
  • Step 4
    Add Veggies to potato’s and then add dressing mix….Stir altogether and out in frig for at least 1 hour!
