This a great way to get that yummy potato salad you crave. But with about 1/2 the fat. I actually got this from Rachel Ray....And it was Kid tested by very own 9 year old who only like Pizza, Chicken Nuggets and French Fries....She liked it!

  • 1 pkg
    cherry tomatoes
  • 1/2 c
    chopped celery
  • 1 large
    cucumber cut into chunks
  • 1/4 c
    cilantro or parsley
  • 1 lb
  • 1/4 c
    light or reduced fat may or light sour cream
  • 2-3 Tbsp
    sweet relish
  • 1/4 c
  • 2-3 Tbsp
    yellow mustard
  • 1-2 pinch
    of salt and pepper (season to your liking)

How to Make Vegged Out Potato Salad


  1. Boil Potatoes till they are soft. Chop Potatoes into chunks
  2. Chop Celery, Cucumber and Cilantro or Parsley
  3. In a Bowl Mix Fat Free Mayo or Sour cream with Sweet relish, yellow mustard, onions, and seasoning and Mix together.
  4. Add Veggies to potato’s and then add dressing mix….Stir altogether and out in frig for at least 1 hour!
