This a great way to get that yummy potato salad you crave. But with about 1/2 the fat. I actually got this from Rachel Ray....And it was Kid tested by very own 9 year old who only like Pizza, Chicken Nuggets and French Fries....She liked it!

Ingredients
- 1 package cherry tomatoes
- 1/2 cup chopped celery
- 1 large cucumber cut into chunks
- 1/4 cup cilantro or parsley
- 1 pound potatoes
- 1/4 cup light or reduced fat may or light sour cream
- 2-3 tablespoons sweet relish
- 1/4 cup onions
- 2-3 tablespoons yellow mustard
- 1-2 pinch of salt and pepper (season to your liking)
How To Make vegged out potato salad

Step 1Boil Potatoes till they are soft. Chop Potatoes into chunks

Step 2Chop Celery, Cucumber and Cilantro or Parsley

Step 3In a Bowl Mix Fat Free Mayo or Sour cream with Sweet relish, yellow mustard, onions, and seasoning and Mix together.

Step 4Add Veggies to potato’s and then add dressing mix….Stir altogether and out in frig for at least 1 hour!
