the really best potato salad

This recipe came from my mother. I've tweeked it a bit, and it remains the best I've ever had.

Ingredients

  • 6 medium yukon gold potatoes
  • 6 large eggs, hard boiled
  • 2 - ribs celery, chopped
  • 5 - radishes, sliced
  • 1 medium green pepper, chopped
  • 1 bunch green onions, white and green
  • 1/3 cup dill pickles, diced
  • 1/3 cup pimentoed olives, chopped
  • 6 slices bacon, cooked and crumbled
  • DRESSING
  • 1 cup mayonnaise
  • 2 tablespoons mustard of choice
  • 1/4 cup juice from olives or pickles
  • dash salt to taste
  • 1/2 tablespoon pepper

How To Make the really best potato salad

  • Step 1
    Peel and dice potatoes. Cook until just fork tender. Cool.
  • Step 2
    Cook eggs until hard boiled. Cool, peel and chop roughly
  • Step 3
    Add all ingredients except for the bacon.
  • Step 4
    Prepare dressing. Add to salad until coated. A bit more or less as you desire. Top with bacon just before serving and chopped chives if you have them.
