This recipe came from my mother. I've tweeked it a bit, and it remains the best I've ever had.

  • 6 medium
    yukon gold potatoes
  • 6 large
    eggs, hard boiled
  • 2
    ribs celery, chopped
  • 5
    radishes, sliced
  • 1 medium
    green pepper, chopped
  • 1 bunch
    green onions, white and green
  • 1/3 c
    dill pickles, diced
  • 1/3 c
    pimentoed olives, chopped
  • 6 slice
    bacon, cooked and crumbled

  • 1 c
  • 2 Tbsp
    mustard of choice
  • 1/4 c
    juice from olives or pickles
  • dash(es)
    salt to taste
  • 1/2 Tbsp

How to Make The Really Best Potato Salad


  1. Peel and dice potatoes. Cook until just fork tender. Cool.
  2. Cook eggs until hard boiled. Cool, peel and chop roughly
  3. Add all ingredients except for the bacon.
  4. Prepare dressing. Add to salad until coated. A bit more or less as you desire. Top with bacon just before serving and chopped chives if you have them.
