I was tired of the same old potato salad at bbq's and wanted a lower carb alternative!! So here I came up with a Sweet Potato Salad!! Super tasty and a huge hit at every party!!

Ingredients

  • 6 - sweet potatoes, peeled, cubed, cooked and cooled
  • 1 cup mayonnaise
  • 1 - shallot, chopped
  • 1 can pineapple chunks, canned
  • 2 tablespoons pineapple juice (from canned pineapple)
  • 2 tablespoons orange juice
  • 1 tablespoon ginger powder
  • 2 teaspoons paprika, ground
  • 1 1/2 tablespoons cinnamon, ground
  • 1/4 cup green onions, chopped (optional)

How To Make sweet potato salad

  • Step 1
    Cook sweet potatoes until just about tender
  • Step 2
    While sweet potatoes are cooking, chop the shallots into semi small pieces
  • Step 3
    Open the can of pineapples and reserve the juice, add pineapples to bowl with shallots
  • Step 4
    In a seperate bowl combine 1 cup of mayo with 2 tbs pineapple juice, 2 tbs orange juice, ginger, paprika and cinnamon. Use a wire whisk to combine.
  • Step 5
    After potatoes are cooked and cooled, add to pineapples and shallots. Add dressing to potatoes and fold gently.
  • Step 6
    Place salad on serving platter and top with cut green onions
