Sweet Potato Salad

My Mom gave me this recipe and the only thing i changed was adding flaked coconut to it. Very good!

1 lb
sweet potatoes
1/2 c
real mayo
1/4 c
packed brown sugar
1/2 c
chopped walnuts or pecans
1/4 c
coconut flakes
salt and pepper to taste


1Peel and cube sweet potatoes and place in a large pot with water to cover.
2Bring to a boil and cook till fork tender about 8 mins.
3Drain and let cool.
4In a large bowl stir together remaining ingredients and then slowly stir the potatoes in
5Chill for about an hour or 2 before serving.
