spicy potato salad
This potato salad has a very distinct flavour. It's a bit tart and a little spicy. It went well with my Lemon White Fish. I added some Vegenaise to mine and it was really good.

Ingredients
- 6 large yukon gold potatoes, cleaned
- 3 large kosher dill pickles
- 1 cup chopped celery
- 1/2 medium onion chopped
- 2 cloves garlic, crushed
- 1 jar olives
- 4 tablespoons light oil
- 4 tablespoons apple cider vinegar
- 2 tablespoons mustard, dijon or yellow
- 2 cloves garlic, minced
- 2 teaspoons dill, dried
- 1 1/2 teaspoons sea salt
- 1 teaspoon black pepper
How To Make spicy potato salad

Step 1Clean the potatoes and cut into large chunks. Boil until tender, but not soft. Drain and rinse in cold water.

Step 2Drain again and chill in the fridge.

Step 3Dice the pickles, celery and onion, chop the olives and put in a large bowl.

Step 4Add the vegetable mixture the oil, vinegar, mustard, garlic, dill, salt and pepper and mix well.

Step 5Cube the chilled potatoes. Carefully fold the other ingredients in with the potatoes.

Step 6Chill 1 hour and serve.
