- 2 large potatoes (any)
- 1/2 small onion, diced finely
- 1 stalk celery, finely chopped
- 1/2 teaspoon vinegar
- 2 eggs, hard boiled
- 1/2 cup mayonnaise, plus more as needed
- 1/2 teaspoon mustard (any kind)
- dash dill
- dash paprika
- salt/pepper
How To Make southern potato salad

Step 1Peel and dice the potatoes, boil until fork tender, drain and let cool.

Step 2Add the onions and celery to a bowl. Add in the cooled potatoes and sprinkle in the vinegar. Chop the hard boiled eggs and add.

Step 3Gently fold in the mayonnaise, mustard, dill, and paprika. Add salt and pepper to taste.
