Ingredients

  • 2 large potatoes (any)
  • 1/2 small onion, diced finely
  • 1 stalk celery, finely chopped
  • 1/2 teaspoon vinegar
  • 2 eggs, hard boiled
  • 1/2 cup mayonnaise, plus more as needed
  • 1/2 teaspoon mustard (any kind)
  • dash dill
  • dash paprika
  • salt/pepper

How To Make southern potato salad

  • Step 1
    Peel and dice the potatoes, boil until fork tender, drain and let cool.
  • Step 2
    Add the onions and celery to a bowl. Add in the cooled potatoes and sprinkle in the vinegar. Chop the hard boiled eggs and add.
  • Step 3
    Gently fold in the mayonnaise, mustard, dill, and paprika. Add salt and pepper to taste.
