While I am not a fan of Miracle Whip it works in this recipe. The smoked potatoes will leave you wondering "why didn't I think of that"!

Ingredients

  • 6 large
    baking potatoes
  • 1/2 c
    sweet texas onion, chopped fne
  • 1/2 c
    celery, chopped
  • 1/2 c
    red bell pepper, chopped fine
  • 1/2 c
    sweet pickle relish
  • 1 1/2 c
    miracle whip
  • ·
    black pepper to taste

How to Make Smoked Baked Potato Salad

Step-by-Step

  1. Smoke potatoes on an outdoor grill or in a smoker for 1-1/2 hours using Mesquite wood chips.
  2. When done and cool to the touch, cut potatoes into 1/2-inch cubes, leaving skins on
  3. Place in a large bowl-add the onions, peppers, celery, relish and Miracle Whip (no, real mayo will not work with this recipe)
  4. Stir well, add pepper to taste.
  5. Chill for at least 2 hours or overnight.
