Robert's the cook in our household, since he retired. He wanted a potato salad that was different; we both enjoyed it so much I decided to share it. (Hope he doesn't mind!)

Ingredients

  • 15 - 20
    red potatoes, small
  • 1
    red onion, small
  • 1/4 c
    green olives w/pimentos, chopped
  • 1
    med tomato, diced
  • 1 1/2 c
    real mayonaise
  • 1 dash(es)
    paprika

How to Make Robert's 'New' Potato Salad

Step-by-Step

  1. Wash and boil potatoes with skins on, then cube and place in med. mixing bowl; leave skin on potatoes.
  2. Chop red onion, green olives w/pimentos and add to bowl.
  3. Dice tomato and add to bowl
  4. Add mayonaise and mix well. (You may prefer more or less mayonaise)
  5. Chill overnight or for entire day.
  6. Sprinkle lightly with paprika before serving.
