Ingredients
- 2 quarts water
- 1 bag Ore Ida frozen cubed hash browns
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 2 tablespoons dill pickle juice
- 1 tablespoon yellow mustard
- salt and pepper, to taste
- 2 stalks celery, diced
- 1 small shallot, diced fine
- 2 small dill pickles, diced
- 2 - hard boiled eggs, diced
How To Make quick and easy hash brown potato salad

Step 1Bring salted water to a boil. Add the potatoes and cook for 4-5 minutes. Drain thoroughly and add to a mixing bowl.

Step 2Add mayo, sour cream, dill pickle juice, mustard, salt & pepper to a small bowl and mix well.

Step 3Add celery, shallots, dill pickles, hard boiled eggs, salt and pepper to the potatoes. Add the dressing to the potatoes and mix well.

Step 4Cover and store in refrigerator until ready to serve. Refrigerate remaining potato salad.
