potato turkey salad
For many years, I made my own potato salad. Then at some point I got lazy, and started buying it already made at Safeway. I am hungry for the real stuff, so this is what I'm serving my family tonight. (I pre-tasted it, of course - YUM!)

Ingredients
- 6 small potatoes
- 1 cup cucumber, chopped
- 1 cup carrot, chopped
- 1/2 cup onion, chopped
- 2 hard boiled eggs
- 8 ounces sliced turkey (package or deli)
- 1/2 cup mayo
- 1 tablespoon white vinegar
- 1 tablespoon celery seed
- 1 tablespoon sugar
- salt and pepper to taste
How To Make potato turkey salad

Step 1Assemble ingredients.

Step 2Peel potatoes, cut into quarters or eighths. Put in pot of water, add salt, bring to a boil. Cover and cook till soft. Drain and set aside.

Step 3In a bowl, place cucumber, carrot, onion, and chopped hard boiled eggs.

Step 4Cut turkey slices into cubes, add to bowl with vegetables.

Step 5In a different (large) bowl, place potatoes; mash about half of them, leaving some chunks whole. Add the chopped veggies and turkey to the potatoes. Mix well.

Step 6Add mayo, vinegar, sugar, celery seed, s & p; mix well to make sure everything gets coated equally. Chill and serve.
